Excellent sparkling wine as an aperitif and throughout the meal with fish and shellfish. Excellent pairing also with goat cheese.

In the hills of soave the vine-grower, gino magnabosco, together with his family, carry on this very passion that traditions have handed down. Intense scent, dry taste and fresh are characteristics of monte tondo’s wines that are difficult to forget. VINIFICATION: The grapes are pressed and de-stemmed and immediately pressed gently so as not to extract unpleasant substances (polyphenols). Fermentation takes place at 16 ° C at a controlled temperature and lasts about 15 days. The wine then matures in steel for 2-3 months and is then bottled with the addition of yeasts and sugars. In fact, in the bottle there is the refermentation by yeasts, according to the Champenoise method, in Italy called Metodo Classico. After 16 months of resting on the yeasts, disgorgement takes place on 02.07.2018 and the release on the market after about 2 months. Very limited production of about 3,360 bottles per year.

Tasting Notes:
Colour straw yellow color with greenish reflections, it is a sparkling wine with a fine and persistent perlage. The nose releases a delicate hint of yeasts with pleasant fruity notes, apricot, yellow plum, jasmine and acacia flowers and almond. Harmonious taste, almost velvety, with a dry finish.
