Excellent with grilled meats, and second plates not more elaborated.
The grapes are picked in two way: The first part by hand and the grapes are press immediately; the second part by hand and putted in small plastic boxes for about 1 month in special dry and well-ventilated rooms called “fruttai”. The vinification of the first part is classic with a fermentation in steal tank for 8-10 days and a maturation in barriques and tonneaux of 3-4 years for 8 months. The second part, after the dry period, is pressed and fermented in steal tank and aged for 10 months in barrique of 1-2 years. After the bottling, the wine age in the bottle for minimum 6 months before selling.
Colour ruby red verging; elegant wine-like bouquet, is very fresh, plum, cherry, red currant, blue berry, violet, vanilla, cocoa, liquorice and tobacco. Pleasing and powerful, dry, spicy, well-balanced.
