Pairing:
Grilled meat, stewed meat with mushrooms, roasted meats, game.
Appearance:
Profound driving forces and the will to listen – what Sicilians term “dare adènzia”(giving audience) – and an insistence on depth, in an act of understanding that is life itself: Nero d’Avola and Syrah combine to create something of greater value than the sum of their parts.
VINIFICATION: It ages for twelve months in large 110 hl “wood-steel” oak barrels, and then spends another thirteen months in the bottle, at least, before release.
Tasting Notes:
Colour: Deep ruby red full of purple reflections
Nose: The olfactory spectrum is very broad, with ripe fruit that focuses on notes of morello cherry and berries, blackbery and red currant that leave room for vanilla and slightly spicy notes of tobacco anc chocolate.
Plate: In the mouth it is large, powerful, yet velvety in texture. Tannins present but with good elegance. Long live the acidity and very good persistence.
