Masottina Ai Palazzi Cabernet Sauvignon 2022

Often used with Merlot to subdue its softness, this version is vinified as a single variety to highlight its distinctive characteristics and to pay homage to Veneto’s oenological tradition, of which it has always been a part.

Extremely drinkable and fresh, its lush tannins entice into another sip.

Matures for at least 18 months, partly in Slavonian oak barrels and partly in French barriques that infuse pleasant hints of vanilla and cinnamon.

Pairing:
It pairs well with red meats and game, or with flavorful first courses such as pappardelle with hare or duck ragù.

Vinification and Maturation:
After standing on the skins, fermentation begins at a controlled temperature of 28°C. Maturation takes place in Slavonia oak for 24 months. Ages for 12 months in bottle before distribution.

Tasting Notes:
Intense ruby red with garnet reflections, it expresses itself on the nose with red fruit jam, then opens up with notes of blooming thyme and rosemary, layered over elegant lavender. It then gives way to sweeter hints of oriental spices (cinnamon, vanilla, nutmeg, juniper, and cardamom). On the palate, a gentle tannin envelops the balsamic and mineral notes.
